Chocolate Vanilla Moonstone Cookies

I have tons of bittersweet and unsweetened chocolate in the cabinet so it's chocolate baking week! And when I saw these cookies on BiteSizeBaker.com (adapted from Carole Walter's Great Cookies), I thought they were so cute looking...vanilla and chocolate all in a cute lil cookie, I just gotta bake them!

What I wanna find out is why they are called moonstone cookies. Have no idea. I reckon the answer is probably in the book. Anyway, these cookies were real fun to make! It felt like a mini marbling act rolling the vanilla and chocolate batter together. And the cookies turned out simply yummy!




Here's what you'll need:
- 2 oz bittersweet chocolate
- 2 1/4 cups flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon cream of tartar
- 1 cup unsalted butter
- 1 cup white granulated sugar
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 3 teaspoons hot water
1. Preheat the oven to 375 degrees F. Line two baking sheets with parchment paper.
2. Melt the chopped bittersweet chocolate (you can do this in a microwave). Set aside.

3. In a large bowl, sift the flour, baking soda, cream of tartar and salt. Set aside.


4. Cream the butter till smooth.


5. Add the sugar and beat well.


6. Add the egg and vanilla extract, mix well.


7. Add in half the flour mixture and 2 teaspoons of hot water. Mix well, then scrape down the sides of the bowl, and add in the remaining flour mixture.


8. Scoop out 1 cup of batter into another bowl and add 1 teaspoon of hot water and blend it in with a fork. Then pour in the melted chocolate and beat until it is well combined. Then set the chocolate batter aside for 10 mins.



9. Scoop a teaspoon of the vanilla batter onto the baking sheets and leave about 2-3 inches of space.


10. Then scoop a teaspoon of the chocolate batter onto the vanilla batter.


11. Gently, roll the batters together into a ball and flatten it lightly onto the baking sheets.



12. Bake for 12 - 15 mins.



I love the cookies. They taste so simple but so yummy! Be warned, you might wanna keep popping these cookies into your mouth once you start with one!
