Butter Cake

Butter cake is what grannies and mummies use to make. Or what we use to eat when we're little. It's such a simple but yet delicious baked good. It's also called the "Pound cake" in America because it's made of a pound of flour, sugar, eggs and butter. But back home, we know this as simply the butter cake.

Of course, this was a request from the butter monster! I never use to be fond of butter cake until I learnt how to bake one. I'm now floored by its smell and wonderful rich flava. I love a slice for breakfast with coffee...so satisfying.




Here's what you need for a delicious butter cake:
- 1 3/4 cups cake flour
- 2 teaspoons baking powder
- 1/8 teaspoon salt
- 1 cup unsalted butter
- 1 cup white granulated sugar
- 4 eggs
- 2 teaspoons vanilla extract
1. Preheat oven to 350 degrees F. Butter a 9 inch loaf pan and line the bottom with parchment paper, then butter the parchment paper.
2. Sift together cake flour, baking powder and salt twice. (If you can't find cake flour, you can make it yourself. To make 1 cup of cake flour, put together 3/4 cup all-purpose flour with 2 tablespoons cornstarch.)

3. Beat the butter until creamy and smooth.



4. Add the sugar and beat for 5 mins until it's light and fluffy.



5. Add the eggs, one at a time, beating well after each addition.


6. Add vanilla extract and beat well.



7. Add the flour mixture and mix well.



8. Pour the batter into the loaf pan and smooth the top.



9. Bake for 50-60 mins or until an inserted toothpick comes out clean.





Have a slice immediately!!! Yummy!
