Oatmeal Cookies

What do you do when you are wide awake at 9am and it's pouring outside? Bake bake bake! That's what I did today! With some left over oatmeals in the cabinet, I thought "let's fill the cookie jar with oatmeal cookies!"

This recipe is loaded with oats and chocolate chips. The result is a crisp on the outside and chewy on the inside yummy cookie. However, you can subsitute or add on with raisins, dried cherries, walnuts, pecans, etc. Whatever you like!




It's a simple and super quick recipe, 45 mins and you can dunk these cookies into your mouth!
Here's what you'll need:
- 3/4 cup unsalted butter
- 1 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 3/4 cup flour (do not sift)
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 3 cups quick-cooking oats
- 1 cup chocolate chips
1. Preheat oven to 350 degrees F. Line baking tray with parchment paper.
2. Cream the butter with brown sugar for 2-3 minutes.


3. Add the egg and vanilla extract and beat to combine.


4. In a separate bowl, whisk together the flour, baking soda, salt and ground cinnamon.


5. Incorporate the flour mixture to the batter.


6. Add the oats and chocolate chips. Mix well.



7. Roll the dough into small balls and flatten it slightly with your palms. Place them on the baking tray with an inch apart them.


8. Bake the cookies for 15 mins. (If your cookies are bigger in size, bake for a slightly longer.)




Go ahead and bake something yummy out of oats! And I am not lying when I say these cookies are very very very yummy....
